Healthy Summer Caprese Salad

Are you a fan of delicious flavor?


When it comes to summertime cooking, I say the simpler the better. That's why I usually end up making this recipe at least once a week! The ingredients are simple and it's packed full of flavor.



Healthy? Check.

Easy? Check.

Delicious? Absolutely.



Caprese comes in many different forms. The basic ingredients are fresh tomatoes, mozzarella, and basil. From there, it takes on several variations.


Here's my summertime version:

1 pint cherry tomatoes (try heirloom for color variety)

1 pkg. mozzarella pearls

1 cucumber

Several fresh basil leaves

Salt and Pepper

Extra Virgin Olive Oil

Balsamic vinegar (or Trader Joe's Balsamic Glaze)


Slice the cherry tomatoes in half and chop the cucumber into bite-size pieces. Toss together in a bowl along with the mozzarella pearls. Chop the basil leaves and add to the bowl. Drizzle on a little extra virgin olive oil (to your liking) sprinkle with salt and pepper and give it all a good stir. It's good just like this, but if you want a little extra oomph, give it a splash of balsamic vinegar.


Or...


Instead of the balsamic vinegar, once you've plated it, drizzle on a little bit of Trader Joe's Balsamic Glaze (which is basically a reduction). It's the most heavenly little thing in a bottle this side of the Amalfi Coast.
